If it's a straight-edge, double-bevel steel knife, yes — that's most kitchen and pocket knives: chef's, santoku, gyuto, paring, utility, boning. Use the 20° face for Western steel, the 15° for Japanese double-bevel. It won't do serrated, ceramic, or single-bevel blades (yanagiba, deba, usuba) — we'd rather say so than sell you the wrong thing.

The angle is fixed by the tool, not scraped by a slot.
The angle is held on a fixed face, so it doesn't wander into your edge the way freehand mistakes or a sloppy gadget can. Use light, even pressure — that's the one habit to keep.
